Ok you are on the way to the rally but its quite a journey so you need to stop overnight somewhere . Your tired and hungry and need to eat plus its cold so you could do with a warm meal.
NO PROBLEM
put the kettle on as soon as you arive,
the menu is mashed potatoes with carrots and peas and corned beef
the mash is instant so you simply put it into a deep dish and follow instructions, while the kettle is boiling open a tin of peas and a tin of carrot and drain the water out but leave them in the tins. open the tin of meat and cut and place on the plates.
ok the kettle has boiled.
pour boiling water into each tin, use boiling water for the potatoes and mix adding salt pepper and a dab of butter. make tea with remaining water. you can of course make gravy.
serve the potatoes, carefully empty the water from the tins and serve the veg. there you are a warm meal and a drink inside ten minutes.
this is part of the emergency food i carry as a just in case.
you could also open a can of potatoes and pop them into a pan of water to heat up and use the water from those to heat the veg.
quick and simple enjoy.

This will feed four with salad or fresh bread and a bit of fruit to follow
This is one from the camper man who was on telly a while back.
its nice served hot or cold so coud be done in the morning for a picnic dinner.
chop up about 100 gram of chorizo into small pieces and pop into a pan and fry off. remove from the pan and reserve the oils from the meat
chop up a nice sized onion into small bits. put this into the pan and fry untill opaque, next add. one chopped bell pepper, chopped mushrooms and add to the pan and stir in and fry untill just cooked,
Beat up five eggs in a dish and add this to the pan and stir in the mix.
turn the heat down and pop a lid or plate on the pan to conserve the heat. cook getly untill the egs are almost cooked and firm, remove from the top heat and add a handfull of grate cheese and put the lot under the grill on medium heat to complete cooking the top of the egg mix and melt the cheese.
you can add salt and pepper to tast at the egg mix stage if you wish.
serve hot with crusty bread or cold with salad. I like to add a small squeeze of lemon to the salad.
if you can't get or like choritzo then use streaky bacon or even sausage.
if a vegetarian then omit the meat part

creamy bacon and rocket pasta
for this one use any small pasta shapes as they willhold he sauce and cook easy
375g short pasta
4 rashers bacon, sliced thinly
2 leeks, sliced thinly
300ml cream
pinch chilli flakes, optional
2 bunches rocket, sliced thinly
salt and pepper
cup chopped flat-leaf parsley

method
bring a large saucepan of water to a boil and season well with salt. Cook pasta according to packet directions.
Meanwhile, heat a non-stick pan over medium heat. While the pan is heating add the bacon fry untill fat released. Add leeks and cook, stirring until the leeks soften and the bacon starts to crisp up.
Add cream and chilli if using and bring to a simmer. Drain pasta and reserve about 1 cup (250ml) of the cooking water.
Toss pasta and rocket into the bacon sauce and bring back to a simmer. Season liberally with freshly ground black pepper and a little salt. Add the reserved cooking water to achieve the desired consistency of the sauce.
Stir parsley through the sauce and serve immediately. serve with garlic bread,
to heat the bread simply wrap in tin foil and pop under a low grill for a few minutes or break apart and grill as toast.
