this is another easy dish to do without an oven and will go nicely served with rice, pasta or crusty bread and will serve two generouse meals.

Two boneless chicken thighs per person
three slices of smoked streaky bacon
two fat cloves of garlic
one bunch of spring onions
200 ml of hot chicken stock (use stock cube)
good handfull of fresh or frozen peas and same amount sweetcorn (use tinned)
one small gem lettuce chopped up
2 tablspoons of creme fraiche.
You will need a deep frypan or a small wok for this meal

Dry fry the bacon for about three minutes to get the fat out of it and crisp the bacon. put the bacon one side on a plate but leave the fat in the pan.
brown the chicken in the bacon fat on both sides untill brown.
move the chicken to one side and add the thinly sliced garlic and half the spring onions chopped into the same pan and fry gently for about one minute.
pour the stock into the pan and add the bacon . simmer for about 20 minutes
increase the heat and tip in the peas and sweetcorn.
cook for a further five minutes till the peas are tender and the lettuce has just wilted.
check that the chicken is fully cooked and then add the creme fraiche.
serve with rice , pasta shapes or fresh crusty bread
there should be sufficient salt in the bacon but add more seasoning if required.

I think I will try this recipe out Anne it really sounds nice. Anybody got a Perfect cooker? I got one for xmas and I am trying it out I call it my handbag cooker it is just the right size for the Bambi. I will put a photo on the Gallery

Don't add any salt as there is enough in the bacon. It's easy to cook and one I use often. Good to freeze if any left but never been able to do that yet. Serve with rice or jacket potatoe but also good with crusty bread Hope you enjoy it as much as I do .
